Dill is an annual herb related to the celery family and has been used in ayurvedic medicines since ancient times throughout history.
This herb is similar to look at and sometimes gets muddled with Fennel which is a totally different herb used for urinary diseases, whereas Dill is used in herbal medicine to ease swellings and pain. The seed is very useful and often used as a spice in food preparations, Dill is best when used fresh as it loses its flavor rapidly if dried, the leaves and stems can be used to extract oil for manufacturing soaps.
Dill can also be used in the kitchen along with parsley, when finely fresh cut leaves are served as toppings for soups and boiled potatoes, the leaves can also nicely be mixed with butter making a lovely dill butter.
This delightful herb that can be used very successfully all year round in salads, especially with cucumber, cabbage and lettuce salads and popular to use with onions in fresh omelets, is a sort after herb both for good health and medicinal purposes. For best results in benefitting from this herb, please consult with an experienced herbalist for both medicine and food preparations.
